Mandarin Orange Chicken

This recipe is super yummy and easy!!! I have been making an attempt to try more recipes out of my Biggest Loser cookbook and this is one of them. As I am getting closer to the Eugene Marathon, I am getting even more conscientious to what I am eating everyday. I want to make sure that I am fueling my body properly so that I don't bonk!

I made this for dinner on Saturday night. The recipe said to marinate the chicken for at least 6 hours so I put this together in the morning while I was enjoying my latte. :-)

Mandarin Orange Chicken (Makes 6 Servings)

3 TBSP frozen orange juice concentrate (I just used regular OJ and added some extra)
3TBSP low sodium soy sauce
1 TBSP fresh garlic (I added more, love galic!)
1 TBSP hot sesame oil (forgot this at the grocery store so I didn't use it, ooops)
1 tsp chili garlic sauce
3/4 Cup unsweetened mandarin oranges
6 (4 ounce) trimmed boneless chicken breasts (I diced my chicken up)

Directions

In a large resealable bag or container mix the OJ concentrate, soy sauce, garlic oil, chili sauce and stir together. Mix in the garlic, mandarin oranges and chicken.

Seal the bag or container and let marinate for at least 6 hours in the refrigerator. Rotate chicken once or twice during the day if you have time (my chicken was fully submerged so I didn't rotate it).

Preheat oven to 400 degrees and transfer chicken mixture into a baking or casserole dish. Pour the marinade over the top and cover the dish with tin foil. Bake for 25-30 minutes or until the chicken is no longer pink.

I served this with quinoa. It made for a very filling and delicious dinner.
